Mediterranean Baked Fish with Veggies


  • 4 pieces of Tilapia lightly seasoned with salt

  • 1 small Zucchini thinly sliced on a slant

  • 1/2 thin sliced sweet onion

  • 1 grated garlic clove

  • 1/2 roasted red pepper sliced or quartered grape tomatoes

  • 1/2 cup of quality Greek olives quartered

  • Olive oil

  • Mrs. Dash Herb and Garlic or tomato basil

  • Feta or lemon for garnish and balance

Saute onions with garlic until onions are slightly translucent. Layer zucchini on bottom of dish sprinkle with Mrs Dash. Layer fish on top of zucchini and sprinkle with Mrs Dash. Layer onions garlic roasted red pepper (or tomatoes) and olives on top. Sprinkle Mrs Dash and drizzle olive oil on everything.

Cover and bake at 375 degrees for 25 minutes. Remove from oven, sprinkle with feta cheese and cover for 3 minutes. Serve on quinoa with pan juices and lemon wedges.
